Ingredients
  

  • 4 medium courgettes sliced lengthways (about 1cm thick)
  • 2 tbsp olive oil
  • Juice and zest of 1 lemon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp chilli flakes optional
  • 1 tbsp fresh herbs rosemary, thyme, or parsley
  • 1 tbsp toasted fennel seeds optional
  • 2 tbsp Parmesan shavings optional

Method
 

  1. Prepare the Courgettes: Wash and dry the courgettes. Slice them lengthways into even 1cm-thick pieces.
  2. Make the Marinade: In a mixing bowl, combine olive oil, lemon juice, salt, pepper, and chilli flakes. Stir well.
  3. Marinate: Brush the courgettes with the marinade on both sides. Let sit for at least 10 minutes.
  4. Preheat the Grill: Heat the grill to medium-high (400-450°F). Lightly oil the grates to prevent sticking.
  5. Grill the Courgettes: Place the slices directly on the grill. Cook for 3-4 minutes per side until lightly charred and tender.
  6. Finish & Serve: Remove from the grill and sprinkle with fresh herbs, toasted fennel seeds, and Parmesan shavings if using. Serve warm.
