Ingredients
  

  • 1 can 400g butter beans, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1/4 red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1 clove garlic minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red chilli flakes optional

Instructions
 

  • Prepare the Ingredients: Drain and rinse the butter beans. Chop the cherry tomatoes, red onion, and parsley.
  • Make the Dressing: In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and chilli flakes (if using).
  • Assemble the Salad: In a large mixing bowl, combine the butter beans, cherry tomatoes, red onion, and parsley.
  • Dress and Toss: Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
