Ingredients
  

  • Pasta & Chicken:
  • 8 ounces penne pasta
  • 1 pound boneless skinless chicken breast, cut into bite-sized pieces
  • Sauce & Seasonings:
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 3 large garlic cloves minced
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp black pepper
  • 1/2 tsp red chile flakes optional
  • Salt to taste
  • Additional Ingredients:
  • 1/2 cup chicken broth
  • 1 tbsp tomato paste
  • 1/2 cup spinach optional
  • 1 tbsp chopped fresh basil for garnish

Method
 

  1. Cook the Pasta: Boil a large pot of salted water and cook penne pasta until al dente. Drain and set aside.
  2. Prepare the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. Make the Sauce: In the same skillet, add garlic and cook for 1 minute. Stir in tomato paste, red chile flakes, and chicken broth. Simmer for 2 minutes.
  4. Combine Ingredients: Reduce heat and add heavy cream, Parmesan cheese, oregano, and black pepper. Stir well until the sauce is smooth. Add the cooked chicken and let simmer for 3-4 minutes.
  5. Toss with Pasta: Add the cooked penne pasta and stir until well coated. If using spinach, add it now and let it wilt.
  6. Serve & Garnish: Remove from heat, let rest for 5 minutes, and garnish with fresh basil before serving.
