Ingredients
  

  • 150 g dark chocolate at least 70% cocoa, melted
  • 3 large eggs separated
  • 2 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy cream or coconut cream
  • Pinch of sea salt

Instructions
 

  • Melt Chocolate: In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Let cool slightly.
  • Whisk Egg Yolks: In a separate bowl, whisk the egg yolks with honey and vanilla extract until smooth. Gradually add the melted chocolate and mix well.
  • Whip Egg Whites: In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  • Whip Cream: In a separate bowl, whip the cream until soft peaks form.
  • Fold Mixture: Gently fold the whipped egg whites into the chocolate mixture in two batches, then fold in the whipped cream until fully combined.
  • Chill: Divide into serving cups and refrigerate for at least 2 hours before serving.
