Prepare the Chicken: In a bowl, coat the chicken pieces with cornflour, salt, and pepper.
Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 6-8 minutes. Remove from pan and set aside.
Make the Glaze: In the same pan, combine soy sauce, hoisin sauce, brown sugar, ginger, garlic, sweet chili sauce, and lime juice. Stir well and let simmer for 3-4 minutes until slightly thickened.
Coat the Chicken: Return the cooked chicken to the pan and toss to coat in the sauce. Simmer for an additional 2-3 minutes until the sauce clings to the chicken.
Serve: Garnish with toasted sesame seeds and fresh herbs. Serve hot with steamed rice or stir-fried vegetables.
