  • 2 tablespoons cornflour
  • 1 teaspoon ground pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil

  • 1/2 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1/2 cup brown sugar
  • 1 teaspoon fresh ginger minced
  • 2 teaspoons crushed garlic
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon lime juice
  • Optional Add-Ons:
  • 1 red capsicum sliced
  • Toasted sesame seeds for garnish
  • Fresh herbs like chives or coriander
  • Chilli flakes for extra heat

Method
 

  1. Prepare the Chicken: In a bowl, coat the chicken pieces with cornflour, salt, and pepper.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 6-8 minutes. Remove from pan and set aside.
  3. Make the Glaze: In the same pan, combine soy sauce, hoisin sauce, brown sugar, ginger, garlic, sweet chili sauce, and lime juice. Stir well and let simmer for 3-4 minutes until slightly thickened.
  4. Coat the Chicken: Return the cooked chicken to the pan and toss to coat in the sauce. Simmer for an additional 2-3 minutes until the sauce clings to the chicken.
  5. Serve: Garnish with toasted sesame seeds and fresh herbs. Serve hot with steamed rice or stir-fried vegetables.
