  • 1 lb boneless skinless chicken thighs, diced into 1-inch pieces
  • 10 ounces pasta
  • 12 ounces evaporated milk
  • 2 tablespoons olive oil
  • 1 cup chopped carrots
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped carrots, onions, and celery. Sauté for 5-7 minutes until softened.
