- Heat olive oil in a pot over medium heat. Add onions and cook until soft.
- Stir in garlic, cumin, and paprika. Cook for 30 seconds until fragrant.
- Add diced tomatoes and cook for a couple of minutes.
- Pour in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are soft.
- Blend for a creamy texture or leave it chunky based on preference.
- Season with salt and pepper to taste.
- Serve warm with bread or a squeeze of lemon.
