- 1 cup red lentils rinsed
- 1 can 14 oz diced tomatoes (or 2 fresh tomatoes, chopped)
- 1 small onion diced
- 2 cloves garlic minced
- 1 teaspoon cumin
- ½ teaspoon smoked paprika optional
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt & pepper to taste
Heat olive oil in a pot over medium heat. Add onions and cook until soft.
Stir in garlic, cumin, and paprika. Cook for 30 seconds until fragrant.
Add diced tomatoes and cook for a couple of minutes.
Pour in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are soft.
Blend for a creamy texture or leave it chunky based on preference.
Season with salt and pepper to taste.
Serve warm with bread or a squeeze of lemon.
