Ingredients
  

  • 1 cup red lentils rinsed
  • 1 can 14 oz diced tomatoes (or 2 fresh tomatoes, chopped)
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika optional
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt & pepper to taste

  • 1 Blender or Immersion Blender (optional, for a creamy texture)
  • 1 Wooden spoon

Method
 

  1. Heat olive oil in a pot over medium heat. Add onions and cook until soft.
  2. Stir in garlic, cumin, and paprika. Cook for 30 seconds until fragrant.
  3. Add diced tomatoes and cook for a couple of minutes.
  4. Pour in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are soft.
  5. Blend for a creamy texture or leave it chunky based on preference.
  6. Season with salt and pepper to taste.
  7. Serve warm with bread or a squeeze of lemon.
