Ingredients
  

  • 4 medium courgettes cut into batons or rounds
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chilli flakes optional
  • 1 tbsp fresh herbs rosemary, thyme, or parsley
  • 1 tbsp lemon zest
  • 2 tbsp Parmesan shavings optional

Instructions
 

  • Preheat the Oven: Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
  • Prepare the Courgettes: Wash and dry the courgettes. Cut them into even batons or rounds to ensure uniform cooking.
  • Season & Coat: In a mixing bowl, toss the courgettes with olive oil, salt, black pepper, and chilli flakes (if using). Ensure they are evenly coated.
  • Arrange on Baking Tray: Spread the courgettes in a single layer on the prepared baking tray, ensuring they are not overcrowded.
  • Roast the Courgettes: Place in the oven and roast for 15-20 minutes, flipping halfway through, until golden and tender.
  • Final Touches: Remove from the oven and sprinkle with fresh herbs and lemon zest. Optionally, add Parmesan shavings for extra flavour.
  • Serve & Enjoy: Serve immediately as a side dish or mix into salads and pasta.
