- 4 medium courgettes cut into batons or rounds
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp chilli flakes optional
- 1 tbsp fresh herbs rosemary, thyme, or parsley
- 1 tbsp lemon zest
- 2 tbsp Parmesan shavings optional
Preheat the Oven: Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
Prepare the Courgettes: Wash and dry the courgettes. Cut them into even batons or rounds to ensure uniform cooking.
Season & Coat: In a mixing bowl, toss the courgettes with olive oil, salt, black pepper, and chilli flakes (if using). Ensure they are evenly coated.

Roast the Courgettes: Place in the oven and roast for 15-20 minutes, flipping halfway through, until golden and tender.
