Salted Caramel Brownies

Ingredients
  

  • For the Brownies:
  • 250 g unsalted butter
  • 200 g white sugar
  • 100 g all-purpose flour
  • 50 g cocoa powder
  • 4 large eggs
  • 200 g dark chocolate minimum 52% cocoa solids
  • For the Salted Caramel Sauce:
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 1 tsp sea salt

  • 9x9-inch metal baking dish
  • Medium-sized mixing bowls
  • Whisks

  • Wire rack for cooling

Method
 

  1. Prepare the Brownie Batter
  2. Preheat oven to 180°C (350°F).
  3. Melt the butter and dark chocolate together in a heatproof bowl over simmering water. Stir until smooth.
  4. In a separate bowl, whisk together sugar and eggs until smooth and glossy.
  5. Fold in the flour and cocoa powder until just combined. Do not overmix.
  6. Make the Salted Caramel Sauce
  7. In a saucepan over medium heat, melt the sugar, stirring constantly.
  8. Add butter and mix until fully combined.
  9. Slowly pour in the heavy cream while stirring. Simmer for 2-3 minutes until thickened.
  10. Remove from heat and stir in sea salt. Let cool slightly.
  11. Assemble the Brownies
  12. Pour half of the brownie batter into a greased 9x9-inch baking dish.
  13. Drizzle half of the caramel sauce over the batter.
  14. Pour the remaining brownie batter on top and smooth it out.
  15. Drizzle the remaining caramel and swirl with a knife for a marbled effect.
  16. Bake
  17. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  18. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  19. Serving & Storage
  20. Slice into 12 squares. Serve with ice cream or a drizzle of extra caramel sauce.
