Ingredients
  

  • Soup Base
  • 2 tbsp rapeseed oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 large potato peeled and diced
  • 1 head of broccoli cut into florets
  • 1 litre vegetable or chicken stock
  • 140 g stilton cheese crumbled
  • 250 ml milk or oat drink
  • Salt & pepper to taste

  • 1 Large Saucepan – For even cooking
  • 1 Sharp Knife – For prepping vegetables
  • 1 Stick Blender or Food Processor – For a smooth texture
  • 1 Ladle – For serving

Method
 

  1. Sauté Aromatics: Heat rapeseed oil in a large saucepan over medium heat. Add the chopped onion and minced garlic. Sauté for about 3 minutes until softened.
  2. Add Vegetables: Stir in the diced potato and cook for another 5 minutes.
  3. Simmer with Stock: Pour in the vegetable or chicken stock. Bring to a gentle simmer and cook for 10 minutes.
  4. Add Broccoli: Add the broccoli florets and cook for another 5 minutes until tender.
  5. Blend Until Smooth: Remove from heat and use a stick blender to blend until smooth.
  6. Incorporate Stilton: Stir in the crumbled stilton cheese and milk. Mix until fully melted and smooth.
  7. Season & Serve: Adjust seasoning with salt and pepper. Serve warm with optional toppings.
