Stir in the oil, sugar, vanilla extract, and salt.
In a separate bowl, whisk together the flour, baking soda, baking powder, and cinnamon (if using).
Gradually fold the dry ingredients into the wet ingredients until just combined—do not overmix.
Gently fold in the vegan chocolate chips and any optional add-ins.
Let the batter rest for 15 minutes to enhance texture and flavor.
Baking the Banana Bread
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 35-40 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Remove from the oven and let cool in the pan for 10 minutes.
Transfer to a wire rack and let cool completely before slicing.
